The Story Behind Tamarindos Cabo

Tamarindo’s was born out of a passion for authentic Mexican cuisine and a deep respect for the environment. The restaurant’s owner and Chef Enrique Silva envisioned a dining experience that celebrated Baja California’s rich agricultural heritage while promoting sustainable practices.

Originally from Sonora, Mexico, Enrique Silva arrived in Los Cabos in 1990 armed with a degree in agricultural engineering and a love for Mexican cuisine learned in his mother’s kitchen as she prepared daily meals for his large family. He transformed a 19th Century sugar cane farm house into the trailblazing restaurant Tamarindos is today.

A culinary destination, Tamarindos is just 5 minutes from downtown San Jose del Cabo but it’s an aventure! The dry river and dirt roads are part of the experience of this extraordinary place.

On-Site Organic Farm

What truly sets Tamarindo’s apart is its on-site organic farm, which plays a crucial role in the restaurant’s farm-to-table philosophy. The farm is not just a source of fresh produce but also a living testament to the restaurant’s dedication to sustainability and environmental stewardship.

The farm grows a variety of herbs, vegetables, and fruits, which are used daily in the restaurant’s dishes. Visitors can take a guided tour of the farm, learning about the different crops and the sustainable farming practices employed.

It’s an educational experience that highlights the importance of supporting local agriculture and reducing the carbon footprint of food production.

Tamarindos Cabo: The Menu

The menu at Tamarindo’s is a celebration of seasonal produce and traditional Mexican flavors reimagined with a contemporary twist. The menu is a tribute to the region’s diverse and bountiful produce, both from land and sea. Every dish is crafted with care, highlighting the natural flavors of the freshest ingredients grown right down below the restaurant.

Seafood Dishes: One of the highlights of Tamarindo’s is its exceptional seafood, which is sourced daily from local fisheries. The Tamarindo Shrimp Tacos are a crowd favorite, featuring perfectly seasoned shrimp served in jicama “tortillas”. Paired with tangy pico de gallo and pineapple slaw, these tacos offer a delightful burst of flavor that showcases the essence of Baja’s coastal cuisine.

Another standout is the Baja Clams, served super fresh with house made ponzu or grilled with white wine sauce. Do not miss the Mango Ceviche, either. It’s the perfect marriage of catch of the day, leche de tigre, mango, jicama and mint. This dish effortlessly embodies Tamarindos’ dedication to providing a true taste of Baja California.

Vegetable Dishes: For those who prefer plant-based options, Tamarindo’s does not disappoint. The Mezquite Baked Cauliflower with traditional mayan salsa (sikil p’ak) is a must try. It’s presented just as beautifully as it’s masterfully prepared. The cauliflower, albeit a simple dish, is baked to perfection and full of flavor, demonstrating the kitchen’s skill in elevating simple ingredients.

The Baja Thai Salad is another must-try. Think mango and jicama noodles, ginger mist and citric oriental vinaigrette. This dish is both wholesome and a special treat, reflecting Tamarindo’s commitment to farm-fresh, nutritious yet inventive cuisine that goes with trends.

Desserts, Drinks, Service

No meal is complete without dessert, and Tamarindo’s did not disappoint. The Mango Panna Cotta was a standout, offering a creamy texture with a hint of tropical sweetness. It was a perfect end to a memorable meal. Other sweet highlights include Guava Pie, Mango & Cream and homemade Gelato.

The drink menu features an array of artisanal cocktails and local wines. We tried the Cucumber-Serrano Margarita, which was as refreshing as it sounds, with just the right amount of spice. The favorite, however, was the Passionfruit Mezcalita, the perfect blend of sweetness and tang.

You can opt for a margarita or a mezcalita in a range of seasonal ever-changing flavors. Think guava mint, hibiscus basil or tamarind rosemary.

The service at Tamarindo’s was exemplary. The staff was knowledgeable about the menu and enthusiastic about the restaurant’s mission. They were attentive without being intrusive, ensuring that our dining experience was both enjoyable and informative.
