Whether you’re exploring Nice, Cannes, Saint Tropez or any of the charming towns in between, here are the 12 best foods (and one drink) to try in the French Riviera:

1. Socca: The Ultimate Nice Street Food

In Nice, Socca reigns as a beloved street food and a staple snack. This gluten-free delight is a thin, savory pancake made from chickpea flour, olive oil, and seasoned generously with pepper. Cooked in wood-fired ovens until crisp yet tender, Socca offers a delightful contrast of textures.

Enjoyed hot and sprinkled with sea salt, it’s the perfect accompaniment to a stroll along the Promenade des Anglais. We highly recommend Chez Pipo for the ultimate socca experience in Nice. Check out our detailed post on what is socca and where to find the best socca in Nice.

2. Salade Niçoise: A Colorful Medley of Freshness

Salade Niçoise exemplifies the Riviera’s dedication to fresh, seasonal ingredients. A vibrant salad composed of tomatoes, hard-boiled eggs, Niçoise olives, anchovies, and often tuna, it captures the essence of Mediterranean flavors.

Dressed simply with olive oil and herbs, this dish is a refreshing option for warm Riviera days. It showcases the region’s agricultural richness. You will see it on almost every bistro’s menu. It makes for both a quick lunch on the go and a leisurely light summer dinner.

3. Ratatouille: Rustic Provencal Vegetable Stew

Ratatouille is a quintessential Provencal dish that celebrates the bounty of summer vegetables. Consisting of tomatoes, zucchini, eggplant, bell peppers, and onions, Ratatouille is slowly cooked with garlic and herbs until the flavors meld into a harmonious medley.

Often served as a side dish or as a main course, it embodies the simplicity and robustness of traditional Provencal cuisine. If you’re a vegetarian or vegan traveler, a hearty veggie ratatouille will be your best friend.

4. Pissaladière: A Flavorful Onion Tart

Originating from the city of Nice, Pissaladière is a savory tart that features a topping of caramelized onions, black olives, and anchovies on a thin crust. The dough, similar to pizza dough, is typically seasoned with herbs like thyme and rosemary, adding depth to the dish. Pissaladière is enjoyed warm or at room temperature, making it a versatile choice for picnics or casual gatherings.

There are two kinds of pissaladière. One is the pissaladiere niçoise, or from Nice on the French Riviera, and the other is the monégasque, from Monaco. You can simply pick up a few pieces at a bakery and enjoy it on the beach or walking around. Pro tip: you can find very good ones at local supermarkets, too.

5. Fougasse: A Savory Provençal Bread

Fougasse is a traditional bread from Provence, shaped in various intricate patterns reminiscent of the region’s flora. Flavored with olive oil and sometimes enhanced with ingredients like olives, herbs, or sometimes cheese, Fougasse is a delightful accompaniment to meals or enjoyed on its own as a snack.

Its crisp crust and soft interior highlight the craftsmanship of local bakers who have perfected this artisanal treat over generations. If it sounds simple do not be fooled – the combination of flavors in the right proportion is simply divine. It’s actually my personal favorite food on the list and the one I’m still craving weeks after the trip!

6. Pan Bagnat: Salade Niçoise in a Bread Roll

If you like bread and salade niçoise, you’ll love this one. Pan bagnat is essentially a combination of the two. This unique sandwich is a specialty of Nice, but you can find it in Cannes, St. Tropez and elsewhere on the French Riviera.

The sandwich is composed of delicious freshly baked pain de campagne, enclosing a salade niçoise, a salad composed mainly of raw vegetables, hard boiled eggs and anchovies and/or tuna. It’s simply dressed with olive oil, salt and pepper. Called a “bathed sandwich”, it does get soggy if you let it sit, but connoisseurs say it only gets better.

It’s ubiquitous in beach side cafes and bakeries all along the coast and they all prepare it equally well. However, there is one spot that stands out: Restaurant Snack La Calante on Rue Louis Blanc in Cannes. These guys are so dedicated to pan bagnat, they practically turned it into an art form. Just read their reviews and look at the images!

7. Bouillabaisse: A Seafood Lover’s Dream

A visit to the French Riviera would be incomplete without indulging in Bouillabaisse, a classic Provençal fish stew originating from Marseille. This hearty dish typically includes a variety of local fish such as red rascasse, sea robin, and monkfish. It’s simmered with tomatoes, saffron, garlic, and a hint of fennel. Served with a side of rouille (a garlicky mayonnaise) and crusty bread, Bouillabaisse promises an explosion of flavors that highlight the region’s bountiful seafood.

8. Stuffed Vegetables: Les Petits Farcis Niçois

One of the most endearing and favorite of all Provencal dishes is Petits Farcis or stuffed vegetables, also known as lu farçum in the Niçard (Nice) dialect. Literally meaning “little stuffed things,” les petits farcis de Provence is a wonderful dish of roasted, stuffed vegetables. They are the perfect and easy family meal that can be served hot, cold, or warm and everyone loves to eat them.

Petits Farcis are typically made in the summertime when so many great vegetables, like sun-ripened tomatoes, round zucchini, and just the right eggplants start to appear in the farmers’ markets. The great thing about petit farcis is that there are numerous variations on the stuffing, meaning they can be found in vegetarian and vegan versions around the Riviera.

9. Moules Mariniere: Southern Rosé Variation

Moules marinières is the quintessential French seaside dish. The combination of fresh seafood, white wine and shallots accompanied by large hunks of crusty baguette or french fries is an irresistible one. Technically speaking moules marinières (which translates as “sailor-style mussels”) is a traditional recipe from the North of France, specifically Normandy.

However, the French Riviera and Provence have their own take on the dish. They tend to cook it using the omnipresent in the south rosé wine. The results are finger licking good. And – you guessed it – the dish pairs perfectly with a bottle of chilled local rosé Simple, light Riviera dinner on a summer night sorted!

10. Tarte Tropezienne: Cream Brioche with a Historical Twist

Alexandre Micka, a Polish baker, moved to St. Tropez in 1945 and opened a pâtisserie. Inspired by both French brioche and his grandmother’s recipe for lemon and cream, he created a custard-filled brioche bun that was studded with pearl sugar. Three years later, Micka did the on-set catering for And God Created Woman.

Soon enough, Brigitte Bardot fell in love with the cake and proposed ‘la tarte de Saint-Tropez’ as the name. Micka went with a more condensed ‘Tarte Tropézienne’. In the 1970s, Micka trademarked the name and renamed his bakery after it. The recipe is still closely guarded. Traditional methods are still used, including making the sugar crystals in copper cauldrons on site.

11. Lavender Ice Cream: Provence in a Cone

Because of the proximity to the lavender fields of Provence, the south of France is one of the few places in the world where you can taste a genuine artisanal ice cream made with local organic lavender. And the results are as delightful as it sounds. The list of the best foods in the French Riviera wouldn’t be complete without this delectable treat.

As you can imagine, lavender ice cream is very subtle yet full of flavor. Such a wonderful treat on a hot summer day. Just make sure it’s made with natural rather than artificial flavoring or coloring. Expect it to be off white rather than purple.

12. To Wash It Down With: Provence Rosé Wine

Rosé wine is not just the trendy wine of the 21st century. When the Greeks planted the first grapevines in Provence 2,600 years ago, they were already making rosé! This was because wine-making techniques in those days were different. The method of macerating red grapes, which gives red wine its color, was unknown or, at the least, very uncommon. Wine made from red grapes was therefore rosé. In other words, Provence is the oldest wine region in France, and rosé is the oldest known wine!

In Provence, making rosé is a speciality, and a longstanding way of life. All thanks to Provence’s climate, terroir and varietals which are perfectly suited to this wine. The enthusiasm for rosé extended beyond the borders of France. We love it in the US, buying up 37% of the total quantity sold abroad. But we can all agree – it will never taste the same as on a hot summer Riviera night with the Mediterranean waves crushing below us. Salut!

Pro tip: wine in French restaurants is sold not just per glass, full size bottle or carafe, but also in smaller 50cl bottles. Something for every diner’s needs – best foods in the French Riviera deserve decent wine pairing!

Bonus:

While exploring the flavors of the French Riviera also look for: olive tapenade, aioli, soup de pistou, daube (stew), profiteroles, nougat and frozen nougat, deep fried zucchini blossoms, local fresh oysters and pastis drink!

Pro tip: Tapenade and herbs de Provence make for a particularly handy and portable souvenir for the foodies back home. Of the two – the herbs are carry on friendly.
