On a recent visit, our lunch was nothing short of extraordinary. We began with a tuna tartare, delicately dressed in a cilantro vinaigrette and paired with avocado mousse and handmade tostadas crafted from indigenous Mexican corn – a thoughtful nod to regional tradition and technique.

The second course, salmón en adobo yucateco, came adorned with a bright xnipec salsa and a velvety black bean purée, marrying the smoky, spicy, and earthy flavors of Yucatán cuisine in every bite.

Dessert was a refined celebration of Mexico’s sweet heritage: a vanilla flan made with beans from Papantla. It came served with house-made caramel ice cream that was rich, smooth, and perfectly balanced.
To drink, we sipped on a hand-crafted spicy mezcalita. Its smoky kick cut beautifully with citrus and chile, followed by a bold Mexican espresso to cap off the experience.

A Global Lounge with Local Flavor
What makes the Centurion Lounge network unique is its commitment to culinary localization. Each lounge doesn’t just offer a generic menu — it tells the story of its city. At LAX, the Centurion Lounge menu is curated by none other than Nancy Silverton, whose menu pays homage to Los Angeles’ farm-to-table ethos and melting pot of global influences.
